But it's lunch time... I want to eat with my hands! Chicken Guacamole Wraps!

I get it. You like to eat with your hands when it comes to lunch. You've spend most of your life eating things like sandwiches, heros and wraps. Now that you've banished processed grains from your life and switched to healthier food choices you're craving some semblance of how things used to be. Fear not. Here's a super easy and delicious lunch (or anytime!) option that you can easily pick up and eat with your hands.

Here's what you need:
  • 1 avocado
  • 1 medium tomato diced
  • 1/4 cup chopped onion
  • Coconut oil or butter
  • 2 Large leaves of Chard
  • 2 pieces of chicken thigh meat (or meat of your choice) sliced into bite sized chunks
Step 1: Heat up some coconut oil or butter in a pan and throw in the chopped onion, about half of the diced tomato and sliced chicken thigh. Season with paprika, S&P and garlic (hot sauce optional). Cook until chicken is done.
Step 2: In a bowl, mash up the avocado and tomato
Step 3: On a large leaf of chard add the guac and chicken
Step 4: Roll it up and chow down.
